Kunming City, Yunnan Province – Must Eat Food in Kunming City Area
我喜歡透過吃來認識一個地方, 可以從當地的飲食文化來體會風俗民情. 今天跟大家介紹一些來昆明必吃的美食. 這次的介紹中, 有一些算是一般的街邊小吃, 我就不提供店家資訊. 有些我會提供店家資訊, 只是我不是很確定是不是最好吃的, 畢竟我也不是當地人. 講了這麼多, 最重要的是希望我的懶人包可以給正在規劃行程的你一些建議 ?
I love to get to know an area by getting familiar with its food. You can experience the culture and the customs through the local food. Today I am going to share some must-try food at the Kunming area. In this blog post, some of the dishes is a general street food, so I won’t share a particular place. Some I will share a specific place, but I do not know if it is the best one available since I am not a local. Ok, after saying all this, the main important thing is that I hope this blog post will provide some suggests for those who are planning a trip to the Kunming, Yunnan area.
燒餌塊是雲南當地的傳統小吃, 可以算是雲南人專屬的早餐. 餌塊本身是用煮熟的大米壓成圓形薄餅狀, 再用炭火烘烤, 最後塗上醬料和包上餡料即可. 醬料有分為甜的, 鹹的, 辣的. 而餡料則有: 油條, 馬鈴薯(洋芋)絲, 豆芽菜, 醃菜 等. 我個人是選擇甜的醬料搭配油條, 吃起來軟軟的略微帶點嚼勁. 在昆明市, 燒餌塊遍佈大街小巷, 有人推著三輪車賣, 也有店面專門在賣. 像我買的這家就是連鎖店, 叫做”英鳳燒餌塊”.
Shaoerkuai is a traditional local snack of Yunnan. It can be said that it is a Yunnanese breakfast item. The erkuai is cooked rice pressed into thin circular shape and then charcoal baked. It is then finished with sauce and filled with fillings. For the sauce, you have a choice of a sweet one, savory one, or spicy one. The fillings choices have Chinese doughnuts, shredded potato, bean sprouts, pickled veggies, etc… I personally chose sweet sauce with Chinese doughnuts. The texture is soft with a bit of chewiness. In Kunming City, you can find shaoerkuai everywhere. Some sell with a store front, and some sell them on a tricycle. The one I bought here is from a chained store called “Ying Feng Shaoerkuai”.
炸洋芋 (Fried Potato)
炸洋芋是先將切好的洋芋放在水裡, 洗掉多餘的澱粉. 等客人點餐後再現炸. 我品嘗過幾家後, 最喜歡盤龍小學(盘龙小学) 旁邊巷子裡的炸洋芋. 這是一間連招牌都沒有的小店, 但是客人絡繹不絕. 老闆將洋芋炸好後, 會先將油濾過, 再放入小盆中加入各種醬料和芹菜. 醬料的部分有乾,濕兩種選擇, 我比較喜歡吃乾的. 炸的金黃酥脆的洋芋搭配店家的特製辣椒配料, 超好吃, 讓人一口接一口. (不敢吃辣的朋友, 可以請老闆少放些辣椒哦~~)
If I have to make a comparison to the meaning of fried potato in Kunming, it would be the same as Fried popcorn chicken in Taiwan.
Fried potato is made first soaking the potato in water to wash away the extra starch. It is fried fresh when it’s ordered by the customers. After giving a few different places a try, I personally love the fried potato in the alley next to Panlong Elementary School . This is a store without any sign but has a sea of customers. The owner here would fry the potatoes, filter out the oil, and then add sauces and celery. For the sauce, you have the choice between dry and wet. I personally enjoy the dry sauce better. The fried golden and crispy potatoes with the house-made spicy pepper is just amazingly delicious and I could not stop myself from eating bites after bites. (If you are not as tolerant to spiciness you can ask the owner to reduce the spiciness)
“端仕小鍋”的”鹵餌絲”對於昆明市人來說是從小到大的美味, 這裡靠近翠湖公園和雲南大學, 來附近參觀的話, 不妨選擇來此享用午餐. “端仕小鍋”採開放式廚房,可以看到廚師在裡面用大火用小銅鍋一碗一碗煮著鹵餌絲. 餌絲的口感柔軟且帶有嚼勁, 鹵餌絲的調味帶點微辣和微甜. 吃的時候別忘了自己裝一碗店家提供的免費清湯 ? , 不然吃到最後有些油膩.
【 端仕小鍋 D.S Pot 】
Duan Shixiaoguo’s LuErSi is a delicacy enjoyed by Kunmingese growing up. Here is it close to Green Lake Park and Yunnan University. If you happen to be in the area for those, you could choose here to enjoy lunch. Duan Shixiaoguo has an open kitchen so you can see the chef cook the LuErSi with a high flame. The LuErSi is soft and chewy and the seasoning is a bit spicy and sweet. When you eat here, don’t forget to enjoy a bowl of complimentary soup ?, otherwise, it does get a bit of oily.

野生菌火鍋 Wild Mushroom Hotpot
雲南這裡盛產野生菌, 種類有上千種, 所以用野生菌所料理的美味當然不可以錯過. 野生菌煮的火鍋湯頭鮮甜. 當然要品嘗這美味前, 需要先耐心等待, 因為吃了沒有煮熟的野生菌會食物中毒. 野生菌火鍋需要先燜煮25分鐘, 等到野生菌煮熟後, 建議先喝湯, 再品嘗菌. 經過燜煮過後的野生菌口感滑嫩, 吃起來帶有些許的甜味.
Yunnan is abundant in wild mushrooms with thousands of type. Therefore, you shouldn’t miss out on the food here made with wild mushrooms. The wild mushroom hot pot is very fresh and sweet. Before enjoying this delicacy, you first need to patiently wait. Because eating a not well down wild mushroom will cause food-poisoning. The wild mushroom hot pot needs to be cooked 25 minutes. When it’s ready, they recommend drinking the soup first and then enjoy the mushroom. After cooking, the wild mushroom is soft, tender, and sweet.

燒豆腐 Grilled Stinky Tofu
雲南的燒豆腐主要以臭豆腐為主, 它的外形特點是皮黃內白. 用炭火慢慢將臭豆腐表皮烤至金黃色, 店家一邊烤一邊快速地為臭豆腐翻面, 這樣的燒豆腐吃起來外酥內嫩. 品嘗的時候可以搭配乾辣椒粉, 或是店家提供的豆腐乳醬汁, 吃起來又香又辣~
Yunnan’s grilled tofu is mainly based on stinky tofu. Its characteristic is golden-yellow skin and white on the inside. It is charcoal grilled until the skin of the stinky tofu is golden-yellow. The stores will quickly turn the tofu while grilling. The tofu product is crispy on the outside and tender on the inside. You can enjoy this with dry pepper powder or the tofu milk sauce. It taste delicious and spicy.

烤乳扇 (Grilled Rushan)
“乳扇” 顧名思義就是牛奶做成的扇子 (我這樣的解釋好像有點怪 ? ). 但”乳扇”確實是牛奶製作成的薄片. 乳扇的料理方法很多: 烤, 炸, 蒸, 煎… 照片上的料理方式放在炭火上烤, 烤的過程中塗上玫瑰醬或是巧克力醬, 吃的時候要小心裡面的醬料流出來. 乳扇的奶味很濃郁, 吃起來帶有嚼勁.
Rushan literally means a fan made by milk (Kind of a weird explanation? ). However, Rushan really is a thin slice made with milk. There are lots of ways to prepare rushan including grilling, deep-frying, steaming, pan-frying, etc… The image above is rushan grilled with charcoal. While it is grilling, it is layered with rose or chocolate sauce. When you enjoy this, be mindful of the sauce that may spurt out. Rushan’s has a strong milk flavor and is quite chewy.
鮮花餅 (Fresh Flower Cake)
如果說在昆明要買伴手禮, 最常見的應該就是”鮮花餅”. 鮮花餅是用一款雲南特有的食用玫瑰花製作而成的酥餅. 口味有很多選擇, 但我最喜歡的還是經典原味. 鮮花餅吃起來味道算滿清淡的, 不會太甜, 一口咬下, 玫瑰香味會在嘴裡擴散開來, 值得一試.
If you are looking to buy gifts in Kunming, you will often find “Fresh Flower Cake”. Fresh Flower Cake is a cake made by Yunnan’s one-of-a-kind eatable rose. There are lots of flavors to choose from, but I personally prefer the classic original flavor. The Fresh Flower Cake’s flavor is on the light side and not too sweet. With each bite, the delicious smell of rose will quickly spread in your mouth. It is really worth a try.
米線, 過橋米線 Rice Noodle, Crossing the Bridge Noodles
雲南人愛吃米線, 且將米線的吃法發揮到極致, 有各式各樣的烹飪方式: 煮, 炒, 涼拌, 燙…口味也很多: 小鍋米線, 腸旺米線, 豆花米線, 涼米線, 鹵米線…而其中最有名的就是過橋米線
Yunnanese loves to eat rice noodle and have just prepared it every way imaginable including boil, fry, make a cold dish out of it, etc.. There are lots of variety to choose from too such as small pot rice noodle, pig intestine rice noodle, tofu pudding rice noodle, cold rice noodle, stewed rice noodle, etc… And one of the most famous ones is the Crossing the Bridge Noodle.
過橋米線分為三個部分: 滾燙的雞湯, 米線, 配料. 而配料的種類很多, 有生肉片, 熟肉片, 火腿, 鵪鶉蛋, 豆皮, 榨菜, 韭菜, 蔥, 豆苗…
過橋米線的吃法應該是先將生肉和鵪鶉蛋放入滾燙的湯中, 再放入其他熟的肉, 接著素菜, 最後放入米線. 攪拌一下就可以吃了.因為最一開始放入生肉和鵪鶉蛋, 所以吃的時候, 肉片和鵪鶉蛋已經燙熟了. 吃的時候要小心湯很燙. 過橋米線的湯頭鮮甜濃郁, 米線很Q彈滑口, 是來雲南玩必嘗的美味!
Crossing the Bridge Noodle is split into 3 parts: boiling hot chicken broth, rice noodle, and ingredients. There are lots of choices when it comes to the ingredients. There are raw meat slices, ham, quail egg, tofu curd, leek, scallion, bean sprouts, etc…
To enjoy a crossing the bridge noodle, you should first put the raw meat and quail egg into the boiling broth, and then put it cooked meat, followed by the veggies. Then lastly, put in the rice noodle, stir and enjoy. Since you put in the raw meat and quail eggs at the very beginning, they should be fully cooked by now. Be careful as it would be very hot. The crossing the bridge noodle is sweet and flavorful and the rice noodle is delicious and chewy. This is a must-try when you come to Yunnan for sure.
