今年生日我決定在【 MUME 】吃晚餐慶祝,
【 MUME 】集合了來自各國的主廚團隊
大家來自不一樣的文化背景, 碰撞出創意的火花
強調盡量使用在地最新鮮的食材,
以歐洲現代料理的方式呈現自己獨特的美味

I’ve decided to celebrate my birthday with a dinner at MUME.
MUME showcases a chef team with members from all over the world.
The different background cultures of the chefs came together to create creative sparks.
They emphasize using the freshest of the local ingredients and to show their unique delicacy using modern European cuisine.

客人的外套也會掛在網子上

MUME uses metal fences to separate the different dining area.
They hang customer’s coats on the fence.

▲店內的燈光昏暗, 營造出米其林餐廳的氛圍
每張桌子上都有粗麻線繩造型的吊燈
吊燈的燈光直接照在桌面, 所以即使店內光線較暗,
Menu和菜色都看的很清楚, 也可以拍的很清楚 ?
整個環境就是燈光美,氣氛佳

The lighting inside the restaurant is on the dark side here which creates an ambiance of a Michelin-like restaurant.
Each table has a rope-style hanging light on top of it.
The light directly shines on the table so even though the lighting overall in the restaurant is dark, you can see the menu and the food clearly. The pictures I took came out quite clear too ?
Overall, the environment has beautiful lighting and ambiance.

The menu is English only. If you can’t read it, it is ok. The waitresses here will explain in details every dish, and also will show pictures of them.

▲麵包附上三種佐料, 分別是: 海鹽, 煙燻奶油, 和 啤酒奶油
這兩種奶油都是外面很少見的口味, 對我來說很新奇
兩種奶油相比, 我更偏好帶有濃郁氣息的煙燻奶油
啤酒奶油味道較淡更接近於一般的原味奶油

The bread came with sea salt, smoked butter, and beer butter.
You rarely see these 2 types of butter outside of here, quite new to me.
As for the 2 butter, I prefer the more flavorful smoked butter.
The beer butter is on the lighter side and very similar to your normal butter.

▲麵包是剛出爐的, 吃的時候還是溫熱的
口感扎實Q彈, 外酥內軟
嚼起來有淡淡酵母發酵後的微酸香氣
值得細細品嘗

The bread is freshly baked and was still warm in hand.
It is chewy, hard on the outside, but soft on the inside.
The bread is very delicious and worth taking your time to enjoy every bite.

▲在雞肝上有一層脆脆的焦糖, 再鋪上新鮮的菜葉點綴
處理過的雞肝沒有腥味,口感很像烤布蕾般的滑嫩。
整道料理吃起來甜甜鹹鹹, 搭配酸麵包非常好吃!

On the chicken liver, there is a layer of crunchy caramel. On top, there is also fresh veggies.
The processed chicken liver flavor isn’t too strong. The texture is soft like a Creme Brûlée.
Overall, the dish is both sweet and savory. It is very delicious with the sourdough.

▲這是我吃過最軟嫩多汁的雞胸肉
低溫真空烹調後的雞胸肉外滑內嫩
一旁的綜合菇類也調味的很棒

The is the most tender and juicy chicken breast I have ever had.
The chicken breast was vacuum cooked at low temperature and is very soft and tender.
The mixed mushrooms on the side are seasoned well.

▲【 MUME 】的燉飯採用薏仁取代了傳統的Risotto
吃之前先將水波蛋拌入,
因為採用薏仁, 口感是新奇的Q彈
但整體調味太鹹且顯得很平淡, 個人不是很喜歡

Unlike traditional risotto dishes, MUME substitute in barley.
First, you should break the poached egg and mix in well.
Since they use barley, the texture is surprisingly chewy.
However, the overall seasoning was too salty and made this dish not too enjoyable.

▲牛小排的油花細緻均勻分布,
碳烤過後使得牛排表層酥脆
熟度掌控的完美, 牛肉口感十分軟嫩
一旁的大白菜帶有烤過之後釋放出的甜味
小紅蘿蔔則帶有檸檬的香氣
搭配牛肉一起品嘗能享受到不同層次的口感

Look at this beauty right here.
The grilled steak has a very crispy skin.
The doneness of the steak was controlled perfectly. The steak was very tender.
The cabbage on the side is very sweet after baking.
The carrots have a hint of lemon’s taste.
You can enjoy layers of different textures by eating these with the steak

【 MUME 】集合了來自各國的主廚團隊
大家來自不一樣的文化背景, 碰撞出創意的火花
強調盡量使用在地最新鮮的食材,
以歐洲現代料理的方式呈現自己獨特的美味
這裡的菜色很精緻, 用餐氣氛很浪漫舒適
只是高級餐廳用餐還有時間限定這點我不是很滿意
餐點的部分我推薦:
Snacks: Country Sourdough, Liver Brûlée,
Smaller: Mushroom & chicken,
Bigger: Beef Shortrib
但因為【 MUME 】的菜色會隨著季節替換
大家來可能會品嘗到不一樣的料理

Verdict

MUME showcases a chef team that gathered members from all over the world.
The different background cultures of the chefs came together to create a creative spark.
They emphasizes are using the freshest local ingredients, and to show their unique delicacy using modern European cuisine. Each dish here is very delicate, and the ambiance is comfortable and romantic. However, I was shocked that a high-end restaurant like this would have a dining time limit.
For the food, I recommend:
Snacks: Country Sourdough, Liver Brûlée,
Smaller: Mushroom & chicken,
Bigger: Beef Shortrib
But since MUME’s food changes with the season, you may be eating dishes completely different from mine. I welcome all to let me know your experience at MUME.
