Compared to other Banqiao’s dessert shops, “SWEET as HOPE Bakery” definitely goes a route of a lower profile as there really isn’t any pictures on Instagram. It really is a dessert shop shrouded by mysteries.

Robert Hope, the main chef of “SWEET as HOPE Bakery”, specializes in design and creation of many different kinds of creative desserts. He used to be the main dessert chef of “Le Palais du Jardin”, “Park Lane Hotel”, well known “Savoy Hotel” of London, and many other Taiwan and China’s 5-star hotel.

“SWEET as HOPE Bakery” is located at No. 17, Lane 158, Section 1, Zhongshan Road, Banqiao District, New Taipei City. It is close to Banqiao Subway station directly behind New Taipei City Hall. You can find this dessert shop by going in the alley between HSBC bank and Easy House.
There is a smoking area outside the bakery.

I came in on a Friday afternoon on a spur of the moment. The bread and desserts were basically all gone. Seems like this place’s business is really good.
But I was really lucky since my target dessert “Candied lemon” was still available!
There aren’t many seatings inside this dessert shop. There are only this table and bar seats.

Maybe because I came late, they were starting to clean the kitchen already.

I came to “SWEET as HOPE Bakery” for this whole lemon dessert.
This is not a dessert that is shaped like a lemon, it is an actual whole lemon!
Chef Robert first scoops out all the lemon’s flesh, and shave off the white bitter part of the lemon.
Then they bake the lemon for 4 hours, chilled and soak in sugar water. Finally, they stuff in custard, lemon fillings, and grapefruit pulps.
The outside looks like an ordinary lemon, but the creation process takes over 18 hours. Therefore they can only produce 20 of these per day.
Since the outside is real lemon skin, so it took some effort to cut it open. Once I was able to cut it, the filling inside was crushed and distorted.
Since they went through the complex process which includes getting rid of the bitter white part of the lemon, the lemon skin does not taste sour at all, it was a bit chewy instead. After eating it, my mouth is full of the refreshing taste of the lemon.
The filling is mainly made with lemon custard. It was silky smooth, refreshing and not too heavy. The grapefruit inside adds a bit of sourness to add an extra layer of texture into this dessert.

Since they shaved off the bitter white part and other complex processes, the lemon skin did not taste bitter at all. It was chewy. After eating the dessert, the mouth is full of lemon’s refreshing taste.
